Cliff Richard, Chef.

Cliff’s passion for cooking  began as a young child. He attended UTC and EMCC culinary programs earning an Associate’s Degree in Culinary Arts.

He has worked professionally as a Chef since 1999, cooking locally, with Maine Maritime Academy in ports of call in Europe, in Bar Harbor, and on Ocean Drive in South Beach Miami. He has experience with fine dining, catering, hospitality, instructional, and institutional style cooking.

In recent years Cliff has been working as a “Chef for Hire” through his own small business Chef on Demand. He offers personal chef style services, cooking lessons, corporate wellness, consultation, menu planning, and lesson themed parties. Cliff regularly teaches public cooking classes sponsored by adult education departments. He enjoys teaching back to basic culinary techniques and sharing with people how accessible “fancy” foods can be at home. Cliff is excited to be moving toward opening a commercial kitchen studio & expanding his services.

Chef on Demand has allowed Cliff to venture into large-scale projects as well. He recently provided all Catering & Craft services on location for production of the feature film “Beneath the Harvest Sky” & spent the 2013 summer season as the Executive Chef for the Bangor YMCA’s Camp Jordan Wilderness Center, successfully transitioning their food program in-house.

Community involvement and volunteerism are very important to Cliff.  Cooking Matters Maine is a pet program for Cliff. His volunteerism with the Cooking Matters program has allowed him to spread his passion for back to basic cooking &  fresh (local) agriculture to families and adults outside of his recreational classrooms. Chef on Demand was born from the philosophy that community strength comes from social health as well as physical health and Cooking Matters is a program that fosters both. As a family business owner, Cliff firmly believes in nourishing the community in all ways possible.

ORONO/OLD TOWN
All classes are $15 per person and will be taught at the Old Town Rec Center.

Tues 10/1: Dry and Ground Spices      6-8pm      $15p/person      Location: OT Rec 342 Bennoch Rd.
We will be going over how to choose and use dry & ground spices, including salt and pepper. Chef Cliff will show you how to make your own spice blends including Grand Marsala, Chinese Five Spice, Homemade Chili powder, & Homemade Curry powder, and how to incorporate them into your cooking. Handouts with recipes, instructions, and helpful tips will be provided to take home. There is sample tasting in every class.

Tues 10/15: Winter Root Vegetables      6-8pm      $15p/person      Location: OT Rec 342 Bennoch Rd.
Have you ever wondered what the difference is between a turnip and a rutabaga? In this class learn about root vegetables, and how to identify, store, cut, and use root vegetables. Chef Cliff will demonstrate professional skill to create dishes with root vegetables, such as parsnip puree, that help you create that little something special. Handouts with recipes, instructions, and helpful tips will be provided to take home. There is sample tasting in every class.

Tues 11/12: Soups      6-8pm      $15p/person      Location: OT Rec 342 Bennoch Rd.
Chef Cliff will demonstrate how to make his delicious Corn Chowder with bacon and roasted red peppers and discuss flavor profiles examining a classic Chicken Soup as well as thickening techniques. Students will go home with the recipes & step by step instructions. Handouts with recipes, instructions, and helpful tips will be provided to take home. There is sample tasting in every class.

Tues 12/3: Chocolate      6-8pm      $15p/person      Location: OT Rec 342 Bennoch Rd.
Learn the secrets of Cliff’s coveted chocolate truffles. Chef Cliff will demonstrate how to make chocolate mousse & truffles. You will be surprised how easy they can be! This class will include discussion on tempering chocolate and gluten, soy and dairy free options for the truffle recipe. Handouts with recipes, instructions, and helpful tips will be provided to take home. There is sample tasting in every class.

This class discusses how to choose and use dry and ground spices, including salt and pepper. Chef Cliff will demonstrate how to make your own spice blends including Chinese Five Spice, homemade Chili Powder and homemade Curry Powder and how to incorporate spices into your cooking. Chef Cliff will demonstrate the preparation of recipes using spices with sample tasting in class. Handouts with recipes, instructions, and helpful tips will be provided to take home.

Wed. 11/6 : Introduction to Knives Skills      5:30-7:30pm      $25p/person      Location: TBD
This is an introductory course on using, choosing, and caring for kitchen knives and how to use professional techniques to create delicious dishes. This class will include discussion on types of knives, how to choose a knife, which knives are best for which techniques and how to use knives as tools. Basic knife skills will be demonstrated, and Chef Cliff will break down an entire chicken and discuss tips for how to store and use each part. Waste not, want not! He will demonstrate basic carving techniques just in time for the holiday meals, with sample tasting in class. Handouts with recipes, instructions, and helpful tips will be provided to take home.

In Home Class Parties: Cliff is available for in home cooking class “parties”. Think purse parties or product parties…without the sales pressure! Have a relaxing evening at home with friends learning a cooking technique or how to make that perfect dish. Or how about a family night where you share the fun learning to create the next family favorite treat! We are always open to suggestions and requests and are excited to offer a unique way to learn and laugh!  Class party costs differ depending on ingredients, time, and number of participants, but we always aim to keep the focus on fun and affordability.

Corporate Wellness Classes: Cliff offers culinary classes to all sizes of  businesses. Classes are customized to meet your wellness budget and to focus on topics most in demand by your employees. We strive to make learning to invest in health and well-being fun, relaxed, and educational. Our motto is ‘empower to experiment’  and we offer culinary knowledge in hopes to share how easy, convenient  and enjoyable focusing on how we nourish our bodies can be. Deprivation and shame need not attend! Making healthy choices starts with being realistic about our connections to food and understanding basic culinary skills. Personal Chef Services: Cliff offers this service customized to your taste, event, or need. Cliff will create that special meal for your anniversary, or delicious appetizer for your next gathering, all in your own kitchen. Meal planning, and routine meal preparation now available as well! You choose how you want to use Cliff’s specialized skills & leave the rest to us (including cleanup)! No more waiting for that fine dining reservation, or paying high prices to a caterer, With Chef on Demand you can bring the gourmet home! We plan to expand this service in the Fall/Winter of 2013/2014. Catering: From time to time we do take on very small in home events on events with an on site kitchen. Any catering we do is not traditional catering and is an extension of our personal chef services. As always, stress free planning is our goal and we are confident we can fulfill the vision you have for your intimate event while remaining in your budget. Everyone deserves fun and fabulous food, dietary considerations available. We plan to expand this service in the Fall/Winter of 2013/2014. Keep checking back for exciting details!

      Absolutely! We have bookings with Orono/Old Town/Hampden & Ellsworth adult ed in the works right now. We are ironing out the details & will announce them shortly! Looks like dates will start mid-September :)
